Introduction

Doubles is one of the most popular and beloved street foods in Trinidad and Tobago. This flavorful dish consists of two soft pieces of fried flatbread called bara, filled with curried chickpeas (channa) and topped with a variety of chutneys and sauces such as tamarind sauce, pepper sauce, and cucumber chutney. History of the Recipe

Doubles has strong roots in the Indian heritage of Trinidad and Tobago. During the 19th century, many Indian laborers came to the Caribbean as indentured workers after the abolition of slavery. They brought with them traditional spices, cooking methods, and dishes.

In the 1930s, two vendors named Emamool and Mammodeen in the town of Princes Town started selling a simple snack consisting of curried chickpeas served in fried bread. Customers often asked for two pieces of bread instead of one, and the snack became known as “doubles.” Over time, it evolved into one of the most iconic street foods in the country.
